3/4 cup sugar
pinch of salt
2 and 1/2 cups milk
3 Tab. cocoa (added with the flour)
1/3 cup flour (heaping)
2 eggs, separated
1 Tab. butter
1 tsp. vanilla (very good quality)
Stovetop Instructions: In a heavy-bottomed saucepan, combine sugar, salt, and milk. Blend flour
and cocoa together. Stir into hot milk mixture. Over medium heat, stir mixture constantly until thickened and it
just comes to a boil. In a small bowl, beat egg yolks (temper). Add about 1/2 c. of the hot pudding mixture and mix
well. Return egg mixture to the hot pudding mixture, stirring rapidly until mixtures are well blended. Cook until
thickened and remove from heat. Add vanilla and butter. Stir until well mixed. Pour into baked pastry shell. Top

1/3 cup sugar
1 Tab. cornstarch
1/2 cup water
2 Tab. sugar
4 egg whites
Combine sugar, cornstarch and water in saucepan or microwaveable bowl. Bring to a boil. Cook until thickened.
Remove from heat. In mixer bowl, beat egg whites and 2 Tab. sugar until soft peaks form. Gradually add hot syrup
and beat on high speed until stiff peaks form. Spread over warm pie filling. Seal all the way to the edges of the

Microwave instructions: Heat milk, sugar, and salt until hot - about 3 minutes. Stir in flour

Tip to keep crust from burning - Cover the empty pie pan with foil. Press around the sides, cut
a hole out of the middle that will leave a ring around the sides just wide enough to cover the crust. Remove the
foil ring to use later once the pie is prepared to bake.
