Coconut Cream Pie

2/3 cup sugar

pinch of salt

2 cups milk

1/3 cup flour (heaping)

2 eggs, separated

1 cup coconut

1 Tab. butter

1 1/2 tsp. vanilla (high quality)

1 9-inch pastry shell (baked)



Stovetop Instructions: In a heavy-bottomed saucepan, combine sugar, salt, and milk. When milk is hot, stir in flour. Over medium heat, stir mixture constantly until thickened and it just comes to a boil. In a small bowl, beat egg yolks. Add about 1/2 c. of the hot pudding mixture and mix well. Return egg mixture to the hot pudding mixture, stirring rapidly until mixtures are well blended. Cook until thickened and remove from heat. Add vanilla and butter. Stir until well mixed. Stir in coconut and pour into baked pastry shell. Top with meringue.

No Weep Meringue:

1/3 cup sugar

1 Tab. cornstarch

1/2 cup water

4 egg whites

2 Tab. sugar

Combine 1/3 c. sugar, cornstarch and water in saucepan or microwaveable bowl. Bring to a boil. Cook until thickened. Remove from heat. In mixer bowl, beat egg whites and 2 Tab. sugar until soft peaks form. Gradually add hot syrup and beat on high speed until stiff peaks form. Spread over warm pie filling. Seal edges to crust. Sprinkle with a little coconut if desired.

Bake coconut pie at 350 degrees for 15 minutes or until slightly browned. Cool.

Microwave instructions: Heat milk, sugar, and salt until hot - about 3 minutes. Stir in flour. Microwave at 1 and 1/2 minute intervals, stirring in-between until thickened. Temper eggs as described above.

Tip to keep crust from burning: Cover the empty pie pan with foil. Press around the sides, cut a hole out of the middle that will leave a ring around the sides just wide enough to cover the crust. Remove the foil ring to use later once the pie is prepared to bake.

Alternate Variation: Use 1/2 c. sugar, 3 Tab. corn starch, and 3 egg yolks for pie.
