Garlic Sea Bass
4 6-ounce fresh or frozen sea bass filets about 1 in. thick
1 medium lemon
1/4 cup butter, softened
1 clove garlic, minced, or 1/2 tsp. bottled minced garlic
Salt and fresh ground pepper
1 tablespoon capers, drained (optional)
Thaw fish if frozen. Rinse and remove excess water. Preheat broiler in oven. Sprinkle fish with salt and pepper.
Place fish on broiler rack above pan and broil 4 inches from heat for about 8 to 12 minutes. Fish should flake
easily. Turn once halfway during broiling time.
While fish is broiling, finely shred 1 teaspoon of lemon peel into small bowl. Squeeze 2 teaspoons of juice from
half of the lemon. Save remaining lemon and cut into wedges.
Mix together the lemon peel, lemon juice, butter, and garlic. Top cooked sea bass with hot lemon garlic
butter sauce. Serve with lemon wedges.
