Strawberry Cake Recipe

1 (18-25 oz.) box White Cake Mix

1 (3 0z.) box strawberry flavored instant gelatin

1 (10 oz.) pkg frozen strawberries

4 eggs

1/2 cup vegetable oil

1/4 cup water


Preheat oven to 350. Grease 2 9-in. cake pans. Combine cake mix and gelatin in large bowl. Add pureed strawberries, eggs, oil, and water. Beat at medium until smooth. Pour into cake pans. Bake for 20 minutes. Cool for 10 minutes. Remove from pans and continue cooling on wire racks while preparing icing.   

Strawberry Cream Cheese Icing:

1/4 cup softened butter

1 (8 oz.) cream cheese

1/4 cup frozen strawberries in syrup, thawed & pureed

1 tsp. strawberry extract

7 cups confectioners' sugar

Beat butter and cream cheese at medium until creamy. Beat in pureed frozen strawberries and extract. Gradually add confectoners' sugar until smooth. Spread onto strawberry cake.
